Whole Baked Country Ham

15-18 pound whole country ham
Water

Heat the oven to 250º.

Place the whole country ham in a large, deep roasting pan. The pan should be at least 5” to 6” for the best results.

Pour about 4” of water into the bottom of the pan, then place the ham in the water.

Place the roasting pan in the oven and roast the ham until a meat thermometer registers 160º internal temperature. The entire roasting time may take 6-7 hours.

Remove the roasting pan from the oven and place it on a heavy rack.

Let the ham cool in the cooking liquid until it comes down to room temperature.

Carve the ham into large slices, then carve the remaining ham into smaller slices and chunks. Fry the ham slices and use the other pieces of ham in other dishes. Reserve the ham bones to use in soups, stews and beans.
