cool yogurt sauce usually accompanies roasted meats, but it's
also delicious on its own, served in a small bowl and garnished
with mint. Tzaziki is often made with dill, but I find this
mint version to be even more refreshing. |

medium cucumbers (or 1 long hothouse cucumber), peeled and diced
or shredded |

sprigs fresh mint, chopped, plus more for garnish |

cloves of garlic, minced |

cups plain yogurt |

teaspoon olive oil |

| Combine
ingredients in a bowl or a food processor. They can be blended,
but the sauce should remain somewhat chunky. Cover and refrigerate
until well chilled (at least one hour before serving), then
garnish with mint and a drizzle of olive oil. |
