| There's
something wonderfully Medieval about fools. Like many old dishes,
they're very simple, just cream and fruit. In the Middle Ages
it was thought that fresh fruit was bad for you, but pureed
fruit was okay. That's why most pre-17th century recipes for
pies involve stewing and pureeing the fruit first. This fool
ends up looking very pink and suspiciously like instant pudding,
but trust me - it tastes like summer in a glass! |

lb. fresh strawberries |
|
2
oz sugar |
| 1/2
pint whipping cream |
|
Juice
of 1 lemon |
| Fruit
or cream to decorate |
|

Puree
the fruit with the sugar in a blender or food processor.
Whip the cream until it is quite thick, then add the lemon juice.
Stir in the fruit puree and mix well.
Pile the mixture into a glass dish or individual sundae glasses.
Chill.
Before serving, decorate the top with fresh fruit or whipped
cream (or both!). |
