Shredded Pork with Sweet Bean Paste and Green Onion Threads

  Serves 6
     
 
6 green onions, cut into julienne strips    
1 pork tenderloin, cut into thin strips   2 tbsp. sherry
2 tbsp. soy sauce   1/3 cup water
1 tbsp. sesame oil   1 tbsp. cornstarch
½ cup vegetable oil

Sauce    
1/3 cup sweet red bean paste   1/2 cup sherry
1 tbsp. cornstarch   2 tbsp. sugar

Place the julienned green onions in a bowl of ice water and let soak until ready to serve with the pork.

Place the pork meat in a large bowl. Add the sherry, soy sauce, water, sesame oil and cornstarch to the pork meat. Stir the meat so it is fully coated with the sherry and soy sauce mixture.

Cover the bowl and let the pork meat marinate in the refrigerator for 30 minutes.

Heat the vegetable oil in a wok over high heat. Add the pork meat and the marinade and stir-fry for only 2-3 minutes so that the pork is cooked through but still tender.

In a small bowl stir together the sweet red bean paste, sherry, cornstarch and sugar.

Add the sauce to the wok with the pork and stir-fry until the sauce thickens, about 30 seconds.

Drain the green onions from the ice water and place them in a circle around the center of a serving plate. Spoon the pork onto the center of the serving plate and serve immediately.
