Pork Chops in Pomegranate Mustard Sauce

  Serves 2
     
 
2 thick pork chops 1 tsp Dijon mustard
salt and pepper to taste salt and pepper to taste
flour 1 T butter
butter and oil for sauteeing 1 T honey
½ cup pomegranate juice

Dredge the chops in seasoned flour, and saute in a butter and oil mixture. When the chops are done, remove from the pan and keep warm.

To the pan add the pomegranate juice and reduce to a thick glaze, stirring to get up those wonderful brown bits on the bottom. Add the remaining ingredients, stir well, and serve as a sauce over the chops.
