| Heat
the oven to 375°.
Add the peanut butter, butter, sugars, eggs and vanilla
to the bowl of a mixer. Beat the mixture on low speed until
thoroughly creamed together.
In a separate bowl, sift together the flour, soda and salt.
With the beater running at low speed, add the dry ingredients
to the peanut butter mixture and thoroughly combine.
Shape pieces of the dough into 1 inch balls. Place on an
ungreased cookie sheet. Slightly flatten the balls of dough
with your hand. Bake the cookies for 10 -12 minutes or until
the edges just start to turn brown. Do not overbake the
cookies.
Remove from the cookies from the oven and immediately make
the “face” of the Jack O’Lantern while the cookies are still
hot and pliable. Place two candy corn on each cookie for
the “eyes”. Place one orange gumdrop on each cookie for
the “nose.” Cut a piece of black licorice and place on each
cookie for the “mouth.”
