cup granulated sugar |

cup chopped toasted, unsalted peanuts |

| In
a saucepan over medium-low heat, add the sugar. Cook, stirring
constantly, until the sugar is melted and begins to turn golden.
Add the peanuts and continue to stir until the peanuts are coated
with the melted sugar, about 2 minutes.
Pour
the peanut mixture onto a greased cookie sheet and let cool
to room temperature. Break the brittle into serving pieces.
Store in an airtight container.
