Kheema an-Bhugi
(Ground Beef and Lettuce Curry)

This may seem like an odd combination, but the addition of wilted lettuce brings a cool crunch to this quickly-made curry.

1/2 lb. ground beef 1 small onion (chopped)
1 small lettuce 1 clove garlic (chopped)

1/2 tbsp ground coriander 1/2 tsp ground chilies
1 tsp turmeric 1/2 tsp ground ginger
1/2 tsp ground cumin 1/4 tsp ground fenugreek*

*If you can't find any ground fenugreek, don't worry. It'll be fine without it.

Assemble the spices in a bowl. Heat a little oil or ghee in a pan until hot, then lightly fry the garlic and onion. Once the onion becomes translucent, add the spices and continue cooking for 2-3 minutes more.

Add the meat, a little water to moisten, and cook. Salt to taste, cover, and simmer for about 15 minutes.

Check the seasonings, then add a small lettuce, roughly shredded by hand. Don't try to stir it in, just shred it into the top of the pan, cover and allow to wilt for about 5 minutes.

Immediately before serving, stir the pan tomix the lettuce and meat and serve with steamed basmati rice.

Another optional touch, is to add hard boiled eggs at the same time as the lettuce. Allow one per person.
