Shredded Duck
with Sweet Red Bean Paste

  Serves 4
     
 
The rich duck meat in this Chinese dish is accented by sweet bean paste and crisp green (spring) onions.

Duck    
2 large duck breasts, cut into thin strips   1 tbsp. sherry
1 tbsp. soy sauce   1 tbsp. cornstarch
2 tbsp. water   ½ cup vegetable oil
2 tbsp. sweet red bean paste   2 tbsp. sherry
1 tbsp. soy sauce   1 tbsp. sugar
½ tsp. cornstarch

Green Onion Garnish    
1 cup shredded green onions

Place the shredded green onions in a bowl of ice water and let soak until ready to serve with the duck.

Place the duck meat in a large bowl. Add the sherry, soy sauce, cornstarch and water to the duck meat. Stir to coat the meat. Add a spoonful of the vegetable oil to the duck meat and toss to coat the meat with the oil.

In another bowl, combine the sweet bean paste, sherry, soy sauce, sugar and cornstarch. Stir to combine the mixture.

Heat the remaining oil in a wok over high heat. Add the duck meat and stir fry until the duck is browned. Remove the duck from the wok and drain on paper towels. Pour out all but 1 tbsp. of the oil from the wok.

Return the wok to the heat and add the bowl of sauce to the wok and stir fry until the sauce thickens. Return the duck meat to the wok and stir fry until the meat is coated in the sauce.

Spoon the duck onto a serving platter and garnish with the green onion threads.
