Devilled Eggs

  Makes 16
     
 
8 eggs hard boiled 4 tsp hot mustard
1/2 tsp salt 1/4 tsp white pepper
1 tbl finely chopped onion 1 tsp vinegar
Mayonnaise
Peel the eggs and cut in half lengthwise. Remove the yolks and place in a mixing bowl. Mash and stir in the mustard, salt, pepper, onion and vinegar.

Add enough mayonnaise to moisten and mix well.

Fill the egg whites (you can pipe the filling in if you like, but just spooning it on and swirling a bit with a fork worls fine) and chill before serving.
