In a large bowl place the diced country
ham, peas, celery, green onions and cheddar cheese. Toss
the ingredients to combine.
Add the mayonnaise, parsley and sage to
the salad. Stir the ingredients so that everything is combined
and coated in the mayonnaise. Season the ham salad with
fresh ground black pepper.
Let the salad chill, covered and refrigerated,
for at least 4 hours to let the mayonnaise set and the flavors
come together.
