Country Ham Salad

  Serves 6
     
 
2 cups diced country ham
2 cups frozen peas, thawed
1 cup diced celery
½ cup sliced green onions
2 cups grated cheddar cheese
1 cup mayonnaise
¼ cup chopped flat leaf parsley
1 tbsp. chopped fresh sage
Fresh ground black pepper to taste
Curly leaf lettuce leaves for garnish
Curly parsley for garnish

In a large bowl place the diced country ham, peas, celery, green onions and cheddar cheese. Toss the ingredients to combine.

Add the mayonnaise, parsley and sage to the salad. Stir the ingredients so that everything is combined and coated in the mayonnaise. Season the ham salad with fresh ground black pepper.

Let the salad chill, covered and refrigerated, for at least 4 hours to let the mayonnaise set and the flavors come together.

Line a large serving platter with some whole leaves of curly lettuce. Spoon the chilled ham salad on top of the lettuce leaves, and then garnish the salad with some curly parsley.
