Sauces
based on tahini, a sesame seed paste, are a delightful
staple on Middle Eastern mezza tables. They are wonderful
with fresh bread, as an accompaniment to grilled meats, rice,
and even fresh vegetables. While jars of tahini are always
carried by Arabic, Persian, and Armenian stores - even by stores
catering to a Jewish clientele - most large grocery chains now
carry it in their "international food" sections as well.
This easy dip tastes great on raw vegetables like tomatoes and
cucumbers. It also goes well over fried eggplant, fish, or roasted
lamb. |

cup tahini |

large clove of garlic, chopped |

cup fresh squeezed lemon juice |

cup cold water |
| Salt |

Chopped
parsley or powdered cumin (for garnish) |

| Blend
tahini with garlic, salt, and lemon juice until the mixture
turns white and "tightens." Add the water and blend until smooth.
Pour into a small bowl, garnish, and serve. Makes 2 cups. |
