Butter Cream Filling

 
     
 
This makes a great filling for cakes and cookies. The recipe here is the basic one, flavorings can be added, but in the case of liquid flavors (like coffee essence), be sure to reduce the liquid. Also, use salted butter, sweet cream butter is utterly tasteless in this!
3 oz butter 3 - 4 oz icing (powdered) sugar
Vanilla essence (or other flavoring) Coloring if required
Sieve the sugar to remove all lumps. Cream the butter, and add the sieved sugar by degrees. Beat until smooth and creamy, then add a few drops of essence, and the coloring, if required.
