| This
is one of the hotter Indian curries, so be very careful! The
meat will marinate better if you can resist the temptation to
stick it in the fridge, just cover it and leave it out. |

cloves of garlic - chopped |

tbl ground coriander |

tsp ground ginger |

tsp ground mustard seed |

tbl ground turmeric |

tsp ground red chilies |
| 1/4
tsp ground fenugreek |

Chop
the meat into good sized chunks. Put the rest of the ingredients
into a mixing bowl and add vinegar to make a thick paste. Add
the meat to the bowl and thoroughly mix it with the paste (this
is best done by hand). Set aside for 4 or more hours - the longer
the better.
In a large pan, warm 2 tbl ghee or oil and then add the meat
and all the marinade. Pour in 1/2 pint of water, then cover
tightly and simmer gently for at least 1 1/2 hours until cooked.
Salt to taste.
Serve with steamed rice. |
