| This
was a popular recipe among the ancient Greeks and Romans. Originally
from a book by 4th century BC physician, Mnesithus, it was thought
to cure headaches and soothe upset stomachs. |

small white (drumhead) cabbage |
|
2
heaped tsp fresh cilantro (coriander) |
| 2
tsp chopped rue (fresh or dried) |

pinches asafoetida powder |
| Salt |

Vinegar: |

| 1/2
cup (4 oz) honey |
|

tbl red wine vinegar |

|
Make
the honey vinegar. Bring the honey to the boil until it foams,
then skim it before adding the vinegar. Allow it to reduce a
little and set aside.
Quarter and core the cabbage. Finely slice it then wash and
drain.
Toss with the herbs and 3 tbl of honey vinegar. Sprinkle with
the asafoetida powder and a little salt. Serve.
Note: Asafoetida powder can be bought
at health food stores, or at Indian food shops where it's usually
called "hing." |
