Asian Beef Noodle Soup

  Noodle SoupAsian Beef Noodle Soup is enjoyed throughout Southeast Asia, yet its roots are seeded in Vietnam, where this soup is served throughout the day. It is believed that in addition to its nutritional values, Beef Noodle Soup acts to therapeutically cleanse ones body.

A large bowl of steaming-hot soup is placed in the center of the family table and surrounded by smaller bowls holding garnishes of cilantro, sesame oil, green onions, crispy-fried shallots and fresh lime wedges. The head of the household ladles the soup into individual serving bowls then everyone helps themselves to the garnishes, sprinkling a little bit of each on top of their soup.

This same practice of serving Asian Beef Noodle Soup is found at restaurants throughout America at places with names like “Pho Bay” or “Pho Van Beef Noodle Shop.”

This is a very easy and quick recipe to prepare. You don’t need to use any special cooking techniques. The beef simply cooks in the flavorful broth, keeping it moist. I like to add thinly sliced jumbo sea scallops to the soup, which lends a lush seafood note to the soup.

I like the spicy and piquant flavor of pickled bird chilies, and I like the intense red color they add to the dish. Dried red chili flakes are a good substitute.

You can find fried shallots at any Asian grocery store. Otherwise, the ubiquitous canned fried onions used in that famous green bean casserole will do just fine.

This soup provides your family with a heart-warming, nutritious, fragrant meal in just a few minutes.
